The process of selecting the cherry and harvesting the beans on the Santa Mesquita family farm has remained virtually unchanged for generations. These beans undergo a natural washing process, in which the cherry is plucked and laid in the sun to dry. This process, unique to Brazil and a few other countries, delivers a distinct, flavorful brew because the bean is dried without losing its own natural sugars. Brazil is said to be the world's largest coffee grower, producing one quarter of the world's supply of coffee. A cup of Brazilian “Fazenda Cafundo” coffee is wonderfully sweet and creamy with deep chocolate and caramel notes resonating through in a velvety long finish.

| Overview Fazenda Cafundó was
acquired by Pedro Santa Mesquita from a friend in 1989, a quite place
where he wished to live together with his family. He invested in coffee
cultivation, the strong point of the region, taking advantage of the
1,360 m altitude of the property lands.
Coffee processing system
The altitude and the climate alone already contribute
to the coffee plantations. The soil is adequately prepared to receive
the nursery trees. Cherry beans are picked selectively, and the coffee
is pulped by the wet natural cherry system, always preserving the
coffee’s best properties.
Concern with quality
Technical monitoring occurs periodically, and soil
analyses are carried out so that fertilization is made correctly. Coffee
is harvested selectively: it is washed and dry beans, leaves and green
beans are separated before the drying process. The dry coffee is
processed and appropriately stored in order to maintain its quality.
